I’ve been trying for weeks to enable my google apps for your domain gtalk account but I still get the same message : “Could not register with gateway. Check your credentials and try again.”

This is not SPF record that is needed but XMPP SRV record.
If you can send us privately a test account we can have a look.

You miss the client to server SRV record:

As you see you have only the server to server SRV record set.
